How to make Miso Sablefish with Apple Daikon salad – Chef Wayne Sych

Executive Chef Wayne Sych shows his recipe for delicious Miso Sablefish with Apple Daikon salad.

Wayne is currently Executive Chef – Joe Fortes Seafood & Chop House in Vancouver. He is the Former Executive Chef – The Cannery Seafood Restaurant and The Fish House in Stanley Park, and is also a Chef Instructor.

Ingredients:

4 x 7oz Sablefish filets skin on
2 tbsp Vegetable oil
1 Green onion sliced

For the Sake Miso Glaze
100 ml Miso paste
60 ml Sugar
30 ml Sake
30 ml Mirin

For the Apple Daikon Salad
120 ml mayonnaise
5 ml Dijon mustard
7.5 tsp lemon juice
15 ml white miso
5 ml grated lemon peel
2.5 ml sesame oil
2 each apples, cored and cut into ¼ -inch dice
1 stalk celery hearts, cut into ¼ -inch dice
60 ml daikon radish, peeled and cut into ¼ -inch dice
30 ml thinly sliced green onions
5 ml sesame seeds, toasted
