How to Make Tabouli Salad with barley, tomatoes, peas, mint, and parsley – by Geoffmobile

Geoff from geoffmobile.com shows how to make Tabouli Salad (aka Tabbouleh) with Barley – it’s a great Spring or Summer salad that goes well with anything! Bonus: This recipe is safe for vegans, vegetarians, and meaters alike!

Ingredients:
1 1/2 cup pearl barley
1/2 cup fresh parsley (regular parsley or Italian parsley)
1/2 cup fresh mint
1/2 cup fresh or defrosted peas
2 ripe Vine Tomatoes
1/4 cup extra virgin olive oil
2 cloves garlic, smashed
juice of 1 or 2 lemons (use 1 for a more mellow taste, or 2 for a more tart flavor)
salt and pepper to taste

*** The trick for this salad is to not overcook the barley. You don’t want a mushy barley, rather it should be still a bit chewy (“al dente”) for better texture!

By reenacting a number of the group’s original experiments, Schönfeld questions to what extent the power of fiction can be used to reshape reality, and how far belief can be replaced with a suspension of disbelief.”
