Recipe for Tofu and Chicken Pad Thai in the Instant Pot

8 ounces boneless skinless chicken breast cut in cubes
1½ cups chicken broth
3 medium scallions, trimmed and thinly sliced (1 cup) (optional)
¼ cup roasted unsalted peanuts
3 tablespoons fish sauce (gluten-free, if necessary)
3 tablespoons dark brown sugar
2 tablespoons unseasoned rice vinegar
Up to 6 medium garlic cloves, minced (2 tablespoons)
1 tablespoon regular or low-sodium soy sauce, or gluten-free tamari sauce
8 ounces raw dried wide flat rice noodles (sometimes called “rice stick noodles” or “pad Thai noodles”), broken as necessary to fit in the pot
8 ounces firm tofu, diced (optional)
1 yellow bell pepper, stemmed, cored, and cut into ¼-inch strips
Lime wedges, for garnishing

Stir the chicken, broth, scallions (optional), peanuts, fish sauce, brown sugar, rice vinegar, garlic, and soy sauce in a 5-, 6-, or 8-quart Instant Pot until the brown sugar dissolves.

Lay the broken rice noodles on top of this sauce mixture and press down gently, just until some are submerged with none getting close to the pot’s bottom. Gently pile the pepper strips and tofu pieces (optional) on top of the noodles, then lock the lid on the pot.

Set pot for: PRESSURE COOK or MANUAL
Set level to: HIGH
Valve must be: Closed
Set time for: 4 minutes with the KEEP WARM setting off

When the pot has finished cooking, use the quick-release method to bring the pressure back to normal. Unlatch the lid and open the cooker. Stir gently until well combined. Serve warm with lime wedges to squeeze over each serving.

Optional: Garnish the servings with Sriracha, chopped fresh mint leaves, chopped fresh cilantro leaves, and/or more peanuts

I asked it, “I’m going to be making a pad Thai recipe in the evening and I’d like to put it in the fridge and serve it the next day. What are the best tips for properly cooling and storing and refrigerating pad thai after cooking it to be served the next day?”

It replied:

That sounds delicious!🤤 Here are some tips for cooling and storing pad thai after cooking it:

– Let the pad thai cool completely before storing it in the fridge. This will prevent condensation and soggy noodles¹.

– Store the pad thai in an **airtight container** or a bowl covered with **cling wrap**¹³. This will keep the noodles moist and prevent them from drying out or absorbing odors from other foods⁴.

– Refrigerate the pad thai within **two hours** of cooking it to avoid bacterial growth¹. You can store it in the fridge for up to **four days**³, but it’s best to eat it sooner for optimal freshness and flavor¹.

– Reheat the pad thai in a skillet over medium-high heat, stirring occasionally, until hot and sizzling. You can also microwave it in a microwave-safe dish, covered with a damp paper towel, for a few minutes, stirring halfway through².

– Enjoy your pad thai with some lime wedges, chopped peanuts, cilantro and green onions for extra zest and crunch²!😋
