Ingredients
2 pounds frozen wild caught shrimp, 16-20 count shell & tail on
2 cups Jasmine Rice
3 tablespoons butter
1 teaspoon Sea Salt
1/4 teaspoon Black Pepper
1 pinch Crushed Red Pepper Flakes or to taste (optional)
1 medium lemon, juiced
3 cups chicken broth or vegetable broth
4 cloves Garlic minced or pressed
1 cup of Frozen Peas (or more if desired) – to add at end

Ingredients
1 tablespoon extra-virgin olive oil, or olive oil non-stick cooking spray
4 boneless chicken thighs, trimmed of fat
1/2 teaspoon sea salt / kosher salt
1 teaspoon freshly ground black pepper
1 medium onion, diced
3 garlic cloves, minced
500g bag of dry Rotini pasta
1½ to 2 cups chicken stock
1 teaspoon dried oregano
1 lemon, cut into 8 wedges
3 carrots, chopped into discs
2 zucchini (For Steaming on side)
