2 tablespoons butter
1 medium yellow onion, chopped (1 cup)
8 ounces thinly sliced cremini mushrooms
3 medium garlic cloves, peeled and minced (2 teaspoons)
1/2 or 3/4 pound lean ground beef or ground turkey
1 cup pearl barley (or more, up to 450g)
1 large round red tomato, chopped (1 cup)
1 tablespoon packed fresh sage leaves, chopped
Up to ½ teaspoon grated nutmeg (optional) OR 1 teaspoon of dried thyme
½ teaspoon table salt
½ teaspoon ground black pepper
2 cups beef or chicken broth
1 cup of peeled and chopped carrots (optional)
1 cup of chopped celery (optional)

Press the button for: SAUTÉ
Set it for: MEDIUM, NORMAL
Melt the butter in a 3-, 6-, or 8-quart cooker. Add the onion and cook, stirring occasionally, until softened, about 3 minutes. Add the mushrooms, carrots, and celery, and continue cooking, stirring more frequently, until the mushrooms give off their internal moisture and it evaporates to a glaze, about 5 minutes. Stir in the garlic until aromatic, just a few seconds.
Crumble in the ground beef and cook, stirring occasionally to break up any clumps, until the meat loses its raw, pink color, about 2 minutes. Stir in the tomato, sage, nutmeg (or thyme), salt, and pepper until evenly distributed throughout the mixture.
Pour in the broth, turn off the SAUTÉ function, and scrape up any browned bits on the pot’s bottom. Stir the pot.
Add barley on top, and pat down but do *not* stir.
Lock the lid onto the cooker.

Set the machine for: PRESSURE COOK or MANUAL
Set the level for: HIGH
The valve must be: Closed
Set the time for: 25 minutes with the KEEP WARM setting off

When the machine has finished cooking, turn it off and let its pressure return to normal naturally, about 25 minutes. Unlatch the lid and open the pot. Stir well, then set the lid askew over the pot and set aside for 5 minutes to blend the flavors.

Geoff’s thoughts on Consistent Habits – Toastmasters Table Topics Question

Geoff from geoffmobile.com shares his thoughts on how to make new habits consistent (and how to stop bad habits).

This was an impromptu 2 minute “table topics” speech at Best Run Toastmasters in Vancouver.

Due to COVID-19, all Toastmasters meetings are now taking place online through platforms such as Zoom.

The Toastmasters meeting structure and Pathways educational program is well suited for virtual meetings online, as well as in-person meetings once we are no longer in Quarantine.

360 Chef – Green Pepper, Rice, and Turkey Casserole in the Instant Pot Recipe – How to Make

This is a 360 Video! Move your phone/tablet to explore or drag the screen on a web browser :)

Note: Cooking starts at 45:00 in the video. The first 45 minutes is preparing the ingredients.

Using a 360 camera, I show how to make a delicious Green Pepper, Rice, and Turkey Casserole in the Instant Pot. This 360 video is filmed using the Insta360 One X 360 camera on a baseball hat mount.

1 pound (454 g) lean ground beef or ground turkey
1 onion, chopped
3 cloves garlic, minced
2 large green bell peppers, chopped
Handful fresh spinach, coarsely chopped
1 cup of frozen peas
1 can (14.5 ounces, or 411 g) diced tomatoes with juices
1 can (8 fluid ounces, or 235 ml) tomato sauce
1 cup (120 ml) reduced-sodium beef or chicken broth
1 cup long-grain white rice, rinsed
1 tablespoon (15 ml) Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Important note: Please do *not* stir the pot after adding the rice. Keeping the rice on top without stirring, is a good way to prevent the dish from burning on the bottom.

Select Sauté on Normal heat to preheat the pressure cooking pot. When hot, add the ground beef and onion. Sauté for about 5 minutes, stirring occasionally, until the beef is crumbled and browned. Add the garlic and sauté for 30 seconds more. Add the bell peppers, tomatoes, tomato sauce, beef broth, Worcestershire sauce, salt, and pepper. Stir the pot. Add the rice on top and pat down but do *not* stir. Lock the lid in place. Select High Pressure and 4 minutes cook time.

When the cook time ends, turn off the pressure cooker. Use a natural release for 12 minutes and finish with a quick pressure release. When the valve drops, carefully remove the lid away from your face. Add the spinach and frozen peas, and stir the pot. Let the dish sit for 5 minutes with lid askew for the flavors to blend.

Optional: Pour the casserole into an ovenproof baking dish. Sprinkle the mozzarella on top and broil until the cheese melts and starts to brown.

TIP: If you prefer not to dirty 2 dishes, sprinkle the cheese on the casserole in the pressure cooking pot. Put the lid on and let the steam from the hot casserole melt the cheese
