He is the Former Executive Chef &#8211; The Cannery Seafood Restaurant and The Fish House in Stanley Park, and is also a Chef Instructor.<\/p>\n<p>Thanks very much Chef for allowing me to share this cooking class with you!<\/p>\n<p>Please follow Chef Wayne Sych on Twitter at: @chefwaynesych <a href=\"https:\/\/twitter.com\/chefwaynesych\" class=\"autohyperlink\">twitter.com\/chefwaynesych<\/a><\/p>\n<p>Ingredients:<\/p>\n<p>For the Salmon<br \/>\n4 x 6oz salmon filets<br \/>\n1 cup white wine<br \/>\n4 slices ginger, lightly crushed<br \/>\n1 Tbsp.sugar<br \/>\n2 green onions, lightly crushed<br \/>\n2 tsp.sea salt<br \/>\n1 whole dried chili pepper<br \/>\n4 cups water<\/p>\n<p>For the Bistro Salad<br \/>\n2 heads fennel, shaved<br \/>\n2 heads Belgium endive, julienned<br \/>\n1 head radicchio lettuce, julienned<br \/>\n150 g goat cheese, crumbled<br \/>\n1 fresh lemons, juiced<br \/>\n10 ml Dijon mustard<br \/>\n30 ml honey<br \/>\n2 ml salt<br \/>\n120 ml vegetable oil<br \/>\npinch pepper<\/p>\n<p>For the Candied Almonds<br \/>\n2 Tbsp sugar<br \/>\n1\/8 tsp cinnamon<br \/>\n1\/8 tsp cayenne pepper<br \/>\n1\/8 tsp garlic powder<br \/>\n1\/8 tsp smoked paprika<br \/>\n\u00bd egg whites<br \/>\n\u00bc tsp salt<br \/>\n1 cup whole almonds<br \/>\n<br \/>\nThis video was recorded at the Well Seasoned Gourmet Food Store teaching kitchen in Langley BC Canada.
