View in virtual reality using your Oculus\/Meta Quest 2 headset for best results!<\/p>\n<p>Thanks for watching,<br \/>\nGeoff<br \/>\n<a href=\"http:\/\/geoffmobile.com\" class=\"autohyperlink\">geoffmobile.com<\/a><\/p>\n<p>Recipe for Tofu and Chicken Pad Thai in the Instant Pot<\/p>\n<p>8 ounces boneless skinless chicken breast cut in cubes<br \/>\n1\u00bd cups chicken broth<br \/>\n3 medium scallions, trimmed and thinly sliced (1 cup) (optional)<br \/>\n\u00bc cup roasted unsalted peanuts<br \/>\n3 tablespoons fish sauce (gluten-free, if necessary)<br \/>\n3 tablespoons dark brown sugar<br \/>\n2 tablespoons unseasoned rice vinegar<br \/>\nUp to 6 medium garlic cloves, minced (2 tablespoons)<br \/>\n1 tablespoon regular or low-sodium soy sauce, or gluten-free tamari sauce<br \/>\n8 ounces raw dried wide flat rice noodles (sometimes called \u201crice stick noodles\u201d or \u201cpad Thai noodles\u201d), broken as necessary to fit in the pot<br \/>\n8 ounces firm tofu, diced (optional)<br \/>\n1 yellow bell pepper, stemmed, cored, and cut into \u00bc-inch strips<br \/>\nLime wedges, for garnishing<\/p>\n<p>Stir the chicken, broth, scallions (optional), peanuts, fish sauce, brown sugar, rice vinegar, garlic, and soy sauce in a 5-, 6-, or 8-quart Instant Pot until the brown sugar dissolves.<\/p>\n<p>Lay the broken rice noodles on top of this sauce mixture and press down gently, just until some are submerged with none getting close to the pot\u2019s bottom. Gently pile the pepper strips and tofu pieces (optional) on top of the noodles, then lock the lid on the pot.<\/p>\n<p>Set pot for: PRESSURE COOK or MANUAL<br \/>\nSet level to: HIGH<br \/>\nValve must be: Closed<br \/>\nSet time for: 4 minutes with the KEEP WARM setting off<\/p>\n<p>When the pot has finished cooking, use the quick-release method to bring the pressure back to normal. Unlatch the lid and open the cooker. Stir gently until well combined. Serve warm with lime wedges to squeeze over each serving.<\/p>\n<p>Optional: Garnish the servings with Sriracha, chopped fresh mint leaves, chopped fresh cilantro leaves, and\/or more peanuts<\/p>\n<p>&#8211;
