This 360 video is filmed using the Insta360 One X 360 camera on a light stand mount.<\/p>\n<p>Please subscribe :) <a href=\"http:\/\/youtube.com\/geoffmobile\" class=\"autohyperlink\">youtube.com\/geoffmobile<\/a><\/p>\n<p>African Peanut Stew &#8211; Geoff&#8217;s version<br \/>\nIngredients:<br \/>\n1 tablespoon extra-virgin olive oil<br \/>\n1 yellow onion, chopped<br \/>\n2 cloves garlic, minced<br \/>\n2 tablespoons minced fresh ginger (2-inch knob) or 1 tsp dried powdered ginger<br \/>\n2 sweet potatoes, peeled and cut into 1-inch chunks &#8211; use larger chunks if desired<br \/>\nOne 15-ounce can diced tomatoes or a large can of tomato sauce<br \/>\n\u00bd cup all-natural peanut butter<br \/>\n2 teaspoons fine sea salt (optional)<br \/>\n\u00bd teaspoon red pepper flakes (optional)<br \/>\n1\/2 cup uncooked quinoa, rinsed (or could use up to 1 cup uncooked quinoa if a larger portion is desired)<br \/>\n3 to 4 cups water<br \/>\n2 cups finely chopped kale, stems removed, or 2 cups frozen chopped kale<\/p>\n<p>Just comment below or send me an email if you&#8217;d like the recipe in text form, and I can email it to you.
