<p>Thanks a lot to Tossed and we&#8217;ll definitely be back to enjoy more of your delicious food. The salad is a great sized portion, really delicious and satisfying while being healthy at the same time, and the Crepe Wraps are a fantastic idea. I really love crepes, and turning them into a wrap really appeals to me, especially as the crepe is not the focus of the flavor or texture, but rather compliments nicely the tasty ingredients (as shown in the video!).</p>

<p>&#8220;Antonio learned his craft at the Old Bailiff, Stanley Park Pavilion, and The Boathouse, earning a Culinary Management Degree from The Institute of Culinary Education (ICE) in New York, while picking up extra knowledge in the areas of pastry, desserts and wine from the Dubrulle International Culinary &#038; Hotel Institute.</p>
<p>He apprenticed at New York&#8217;s 3-star Michelin, 4-star New York Times-rated Le Bernardin, under executive chef Eric Ripert, served as head cook at Quince Fine Cuisine, tournant at C Restaurant, and senior sous at Milestones&#8217; signature restaurant in Yaletown.&#8221;</p>

Canon EOS T2i with Magic Lantern, Canon 18-200mm IS lens, ISO 6400 (in restaurant), ISO 1600 (in kitchen).<br />
Audio:<br />
Sony ECM-MS907 condenser microphone on a Rode Shotgun mic clip attached to the camera&#8217;s hotshoe, plugged into the camera directly. Manual audio gain was set. Audio was normalized in post.</p>
<p>Editing: Adobe Premiere Pro CS5.5 (5.5.2) on a Windows 7 Dell PC (Intel i7 processor). Usb 3.0 workflow makes this video very fast to edit (took about an hour to edit).</p>

How&#8217;s it going? Ah so, what is it like being a raw vegan in Vancouver? It&#8217;s terrific. Especially over the past year, the raw food community in Vancouver has really started growing and expanding and there&#8217;s a lot of interest. We have a few really neat eating spots. We have Gorilla Food downtown on Richards Street and then we have Organic Lives on Quebec street, and then there&#8217;s also Eternal Abundance in the Truffles Cafe on Commercial drive, and there&#8217;s a few other places where you can get some raw food. We also have a very active meetup group, so there&#8217;s usually a raw potluck multiple times a month. Everything is positive and more and more people every single week seem to be interested in this &#8211; so it&#8217;s really good and I&#8217;m glad I stumbled on this way of living, it&#8217;s really revolutionized my life. Hello. Hi. Ok, so the question is, if you could change one thing about Vancouver, what would it be? Wow that&#8217;s a good question. I&#8217;d definitely create more spaces for community gardens. So because there is all this big promise of Vancouver becoming a super green city, but yet there&#8217;s been very little done in the name of it. I think we have lots of green space that can be used to improve food security in Vancouver, yet we take that land bought by the city to pretty much put up condos or do things for the Olympics, but I really do wonder what&#8217;s going to happen after the Olympics. But there&#8217;s some really great movement going on around in my neighborhood, Mt. Pleasant, one on Knight and Broadway. That&#8217;s a really good example of what community gardens can be, as well as another one on 7th and St. Catherines. Oh yeah. And so I think there&#8217;s good movement moving towards that but we do need more people to get on board and get involved with community gardens and advocate for food grown in your neighborhood. Ok! <p>So tell me about your art. Why do you want to go to grad school.</p>
<p>Ah, I think I would like to develop my public practice understanding and coming from a theoretical basis I&#8217;ve been reading a lot of Jacques Rancière and thinking about the distribution of the sensible, in other words what is it that we can perceive in our world and what are the limits of that, and how can art expand the scope of our perception of reality, especially in a political sense. And so, an example of that in popular culture art is the Yes Men, in that they proclaim a reality that is within the scope of our perception and then when people realize it isn&#8217;t true the limitations of that scope become visible and therefore they can be surpassed&#8230; so that&#8217;s a good example of the methodology I am working within, which is trying to push what people will engage in a political sense.</p>
